A widely-adapted, open-pollinated variety that thrives even in cool conditions, Royal Burgundy produces abundant, deep purple, stringless pods with vibrant green interiors. These five-inch-long beans are excellent fresh, especially when mixed with yellow and green varieties for a striking visual contrast in salads. Keep in mind that pods turn green when cooked and plants showed top resistance to white mold in trials.
